What's In THis Recipe
Flour
I like to use enriched wheat flour (white), but its lovely if you swap out a 1/4 or 1/2 cup with whole wheat.
Granulated Sugar
Adds sweetness to the crepe batter, perfect for a dessert or sweet breakfast.
Vanilla Extract
Infuses a delightful vanilla flavor, enhancing the overall taste of the crepes.
Vegatable Oil
Contributes to the moisture and texture of the crepes. I use whatever I have readily on hand.
Eggs
Adds richness and helps bind the ingredients together for a smooth batter. When making a double batch, the recipe still works if you use 5 eggs, which is 1 less than double.
Milk
The liquid component that brings the batter together. You can use your preferred milk or a non-dairy alternative.
Salt
Balances the sweetness and enhances the overall flavor profile.
Ingredients:
1 cup flour
2 Tbsp granulated sugar
1 tsp vanilla
1 Tbsp Veg oil
3 Eggs
1/2 tsp salt
1 cup milk
Step by Step Directions:
1. Combine and whisk together Dry ingredients in medium bowl

2. Combine and whisk wet ingredients in medium bowl


3. Add Dry to wet and whisk until smooth

4. Chill covered in fridge for 30 minutes
5. Whisk again to smooth the batter before starting to make the crepes.
6. Use 1/4 cup measure cup to pour into hot pan on medium heat

7. Use silicone brush to smooth out into a thin layer circle
8. Flip once it appears that all the liquid can turned solid. They cook fairly quickly. I don't prefer mine to be too golden so I flip once able to, which is a few minutes.


9. You can serve as they are ready or if you want to finish cooking and eat as a family, Place cooked crepes into fin foil (make packet), stacking one after another on top).
10. Keep warm in warmed oven until ready to consume (within a few mintues)
Serving Suggestions:
- Serve with cut fresh fruit, Maple Syrup, butter, lemon juice and Powdered sugar, berries and sugar, peanut butter, Nutella.
- For savory crepes, skip vanilla, add more salt. Serve with Maple Syrup, bacon, scrambled eggs, etc.

Cooking Tips:
- A single batch serves 2, so you'll want to double this recipe if you have a family of 4.
- If the edge doesn't come up easy, give it a little longer. They tend to crips up and will lift off the pan easily with a few extra seconds.
- Once the pan is hot, they cook quickly because they are so thin.
- The first side takes longer to cook. Once you flip it, it only takes a little bit to cook the second side.
- Fill holes with extra batter
- You only need to butter the pan before the first crepe
- Depending on your level of heat, mine was set to medium and then i turned it down a notch, i cooked 1 min on first side, 30 seconds on second side

- 1 tablespoon extra virgin olive oil
- 3 eggs
- 1/2 teaspoons salt
- 1 cup milk
Instructions
- Combine and whisk together dry ingredients in medium sized bowl.
- Combine and whisk wet ingredients in medium sized bowl.
- Add dry ingredients to wet ingredients and whisk until smooth.
- Chill covered in fridge for 30 minutes (resting at room temperature works as well).
- Heat frying pan over medium heat.
- Whisk crepe mixture again to smooth out.
- Use 1/4 cup measuring cup to portion into a hot pan.
- Use silicone brush to smooth out into a thin layer circle, starting from the centre and working it outwards into a circular shape.
- Once it appears that all the crepe mixture has turned solid (approximately 1 min), flip to lightly cook the other side.
- Cook second side approximately 30 seconds.
- Serve as they are ready, or if you want to finish cooking and eat as a family, place cooked crepes one by one into a fin foil packet, stacking one after another on top.
- Keep warm until ready to serve.
